The process
Get to know the magic of Mexia mezcal through our section dedicated to show the traditional elaboration processes that give life to the unique flavor of Mexia mezcal.
HARVEST
A certain amount of skill and knowledge is required to select ripe pineapples at the optimum time of ripening.
BAKING
After harvesting, the agave piñas are transported to the cooking ovens.
MASHED
Once the pineapples are cooled, they are crushed to extract the juices.
FERMENTED
The juices are transferred to fermentation tanks, natural yeasts are added and "tepache" is produced.
DESTILLED
Two distillations are made to produce the final mezcal.
